Recipe
Preheat oven to 300℉
Line a 9x13 sheet pan with parchment paper
Ingredients
3 cups rolled oats
1 cup sliced almonds
¼ cup pecan pieces
1 cup unsweetened coconut flakes
2 tablespoons ground flaxseed
2 tablespoons hemp hearts
2 teaspoons cinnamon
¼ teaspoons salt
¼ cup coconut oil
¾ cup pure maple syrup
2 tablespoons honey
2 teaspoons pure vanilla
½ cup dried cranberries (will add after baking)
In a large mixing bowl, use a fork to combine the following ingredients-
rolled oats, nuts, coconut flakes, flaxseed, hemp hearts, cinnamon, and salt.
In a small saucepan, over medium heat, whisk together-
coconut oil, maple syrup, and honey until the coconut oil has melted.
Turn off heat and whisk in-
vanilla
Pour warmed mixture over dry ingredients. Mix with a fork for a few minutes to ensure the dry ingredients are coated evenly.
Pour granola over the prepared sheet pan. Spread the mixture evenly over the pan.
Bake at 300℉ for 45 minutes, mixing every 15 minutes for even browning.
Remove the granola from the oven and sprinkle dried cranberries over the top. Mix it and allow the granola to cool. If you prefer chunky granola, use a spatula to push down the granola and allow it to cool completely before breaking it into chunks. Serve over yogurt or with milk.
