Maple Blueberry Sauce
It may be the middle of winter here in Maine, but tomorrow we should reach 40 degrees and we'll need to replace our hot cocoa with homemade ice cream! We use our own wild Maine blueberries and maple syrup in this recipe. It is delicious on everything from yogurt and ice cream to pancakes and waffles! You only need three ingredients and a few minutes to enjoy some at your home!
Ingredients
3 cups frozen blueberries (wild Maine blueberries if you can find them!)
¼ cup pure maple syrup
½ tsp pure vanilla extract
Recipe
Heat frozen blueberries in a sauce pan over medium-high heat for 5 minutes, or until the berries start to slowly boil.
Stir in maple syrup and vanilla. Increase temperature to high heat and bring the mixture to a boil.
Boil for 4-5 minutes, stirring frequently. The berries should begin to burst.
Lower temperature to medium and allow to simmer 5 more minutes.
Turn off the heat and allow the sauce to cool to room temperature. Your sauce should thicken a bit once it is fully cooled. We store ours in a glass jar in the refrigerator for up to a week.
