Chocolate Protein Bites
If you follow us on Instagram, you know I make our original no-bake Protein Bites for our family during the long swim team season! With all the talk about significantly increasing your protein intake, I have been searching for the perfect way to boost our popular recipe. When EarthChimp reached out for us to try their clean protein powder, I knew right away which recipe I'd love to update! EarthChimp is crafting incredibly clean protein powders from their home base of Ireland. Their protein powders are organic, have probiotics, are gluten-free, non-GMO, non-dairy, Vegan, have no artificial flavorings, and have no added salt or erythritol. You can find the ingredients list under each of their powders: chocolate, vanilla, or plain/unsweetened. You can make them ahead to enjoy throughout the week.

Yield 16
Ingredients
1 cup rolled oats
2 scoops EarthChimp Chocolate Protein Powder
1/3 cup unsweetened shredded coconut
1/4 cup ground flaxseed meal
1/2 cup dark chocolate chunks, rough chopped
1/2 cup creamy peanut butter
1/2 cup honey
1 tablespoon chia seeds
1 tablespoon hemp hearts
Dash of cinnamon
Steps
1. Combine all of the ingredients in a large mixing bowl. Mix to thoroughly combine. I prefer to use a metal spoon for this. Cover and chill for at least two hours. Chilling the mix makes it easier to roll into bite-sized balls.
2. Line the bottom of a rectangular baking pan with parchment paper. Use a spatula to scoop the mixture into the pan and evenly spread it into a rectangle roughly 6x7 inches. Cover with plastic wrap and chill for two hours. Once chilled, use a knife to cut into 16 squares. We like to store our chocolate protein bites in an airtight container for up to one week.
